Step 1: Preparing the guacamole.

Let's start our recipe by preparing the guacamole.

Take a long knife such as a Gyuto and hold an avocado firmly in your second hand; cut it lengthwise until you reach the pit. Turn the two halves in opposite directions to separate them. Then tap the exposed pit with the blade of the knife until it sinks in slightly, and turn gently to separate the pit from the flesh of the avocado.

Using a paring knife, make cuts lengthwise and widthwise along the avocado. Then use a spoon to separate the flesh from the skin. Transfer the diced avocado to a bowl.

Step 2: Preparing the guacamole.

Using a fork, start to mash the avocado cubes until you obtain the desired texture for your guacamole.

TIP: For a chunky texture, lightly crush the avocado cubes. For a smoother texture, mash the cubes more using a mortar and pestle.

Step 3: Preparing the guacamole.

Next, dice your red onion on a cutting board. Add half to the avocado purée you made earlier. Mix well.

Set the other half aside in a bowl.

TIP: For extra flavor, add chopped coriander, 1 to 2 cloves of minced garlic, freshly squeezed lemon juice, not forgetting salt and pepper.

Step 4: Preparing the garnishes.

Cut the peppers into halves, removing the stems and seeds. Place the halves on your cutting board and cut into thin strips.

Step 5: Cooking the garnishes.

Next, mix your peppers with the half of the red onion reserved earlier in a frying pan. Add a drizzle of olive oil and salt and pepper to taste. Mix well and cook over a medium heat.

Step 6: Cooking the garnishes.

Add the minced meat. Continue cooking over medium heat until the beef is cooked through and the vegetables are tender-crisp (± 7 min).

Step 7: Cooking the garnishes.

Add the tomato sauce and salsa and simmer for a few minutes (± 2-3 min), stirring constantly.

Step 8: Dressing the fajitas.

Once your mixture is cooked, spread some guacamole on warmed tortillas before adding your meat mixture. Sprinkle your fajita with grated Emmental cheese.

You can serve your fajitas with flavored rice, black beans or nachos.

Enjoy your homemade gourmet fajitas!

KOTAI's advice:

  • You can also prepare all your toppings and condiments in advance, and place them in the middle of the table for all your guests to see. This will create a more convivial atmosphere and leave everyone free to choose.
  • Finally, always use a sharp knife to make your cuts, as a dull blade could cause injury. Maintain your blades with a honing steel or a whetstone (180/800 or 2000/6000), following our sharpening and honing tutorials!
