Matthieu Pasgrimaud is a French chef and the proud owner of 1825 - La Table in Beaupréau-en-Mauges - a commune nestled in the Maine-et-Loire department of western France. Passionate about the art of cooking since his youth, he has continued to perfect his skills over the years.

After completing his culinary training in France, Pasgrimaud moved to London to develop and refine his skills, working alongside world-renowned chefs. Back in France, he worked in a number of Michelin-starred restaurants before realizing his dream in 2020 by opening his own establishment; 1825 - La Table, also a Michelin-starred restaurant. 

Traveling the length and breadth of France, Chef Pasgrimaud has honed his skills in a number of renowned establishments, including the famous Cheval Blanc, run by the celebrated chef Arnaud Donckele. It was a prestigious and particularly rewarding apprenticeship for our chef.

Matthieu Pasgrimaud favors seasonal ingredients and local sourcing to create dishes that are as delectable as they are visually spectacular. His culinary talent has enabled him to rise to the top of the gastronomic scene. Indeed, his dedication to quality, innovation and the use of local ingredients has been rewarded with a loyal clientele and growing recognition as a rising star of French gastronomy!

At the 28th Maison&Objet trade show in 2022, we had the honor of exhibiting our hybrid knives from two very different worlds: Japanese and Western cutlery.

It was at this event that we were able to meet chef Matthieu Pasgrimaud and learn more about his daily life in an exclusive interview. It was a privilege for KOTAI, as his talent and the attention he pays to each of his creations impress us every day. Moreover, his values are perfectly aligned with ours: as meticulousness, often a guarantee of quality and excellence, is at the heart of everything we do, we're constantly striving to improve our products towards excellence!

UPDATE 03/2024: Chef Matthieu Pasgrimaud announced his departure in January 2024 on his Instagram account from 1825 and therefore from Domaine de la Brûlaire (Beaupréau-en-Mauges), and in March 2024 joined Domaine des Etangs (Massignac) as Chef de Cuisine at the Dyades gourmet restaurant.
